Ingredients (serves 2–4)

  • 2–4 large potatoes
  • 1 batch Smokey Beans with Pecan Oil (see recipe)

  • 80–100g fetta, crumbled

Optional:

Method

1. Bake the potatoes
Preheat oven to 200°C.
Prick potatoes with a fork, rub with a little oil and salt, and bake for 50–60 minutes until crisp on the outside and fluffy inside.

2. Prepare the smokey beans

3. Assemble
Slice open each potato and gently fluff the centre.
Spoon over a generous serving of smokey beans.

4. Finish
