Cauliflower Gratin

Cauliflower lathered in a silky & cheesy gluten free white sauce. Finished with breadcrumbs & more melted cheese! This will be a staple through Winter.

This recipe is:

  • Gluten free
  • Adaptable with your favourite pepo flour

You'll need:

  • 1 large head of cauliflower
  • 1 serve of Pepo's gluten free cheesy Béchamel 
  • Salt & pepper to taste
  • 2 handfuls of gluten free breadcrumbs
  • 1/4 tsp ground nutmeg
  • 2 handfuls of cheese (we used tasty & parmesan but gruyere would also be delicious)

Method:

  1. Boil a large saucepan of water and salt generously
  2. Cut cauliflower into medium sized florets and add to boiling water
  3. Preheat oven to 200C
  4. Boil until there is little resistance inserting a fork into cauliflower
  5. Drain cauliflower and put into a baking dish allowing for a single layer then cover generously in béchamel sauce
  6. Sprinkle over cheese and breadcrumbs
  7. Bake in the oven until cheese melts, breadcrumbs become golden brown and sauce is bubbling
  8. Serve immediately
