This will easily serve 15 people as an appetizer or a big bowl
You'll need:
- 500g cooked prawn meat (cut into bite sized pieces)
- 2x mangos cut into small cubes
- 2x red onion finely diced (or 1x red and 1x yellow)
- 2x red capsicum finely diced (or multicoloured)
- 3x limes juiced
- 2x avocados pitted and cubed
- 1x large handful of basil chopped
- 1x large handful of corriander chopped
- 3TBSP macadamia oil
- 1-2 long red chillis finely diced (seeds removed if prefer less hot)
- 1tsp salt and cracked pepper to taste
Method:
- Mix all ingredients into a large bowl to fully incorporate. Put in the fridge to allow all the flavours to mingle for at least 2 hours.
- Remove just before serving and taste then adjust seasoning to suit.
- Put into a large bowl or into individual serving dishes and serve with tostadas, corn chips or crackers
