Ingredients
- 400 g green beans, trimmed and cut into whatever size you like
- 1 small white salad onion, finely sliced
- 1 clove garlic, minced
- 2 tbsp Pepo Farms Pumpkin Seed Oil
- 1 tbsp apple cider vinegar
- Salt & pepper to taste
- Optional: finely chopped dill, basil, or parsley
- Optional: crumbled fetta, squeeze of lemon, and lemon zest
Method
- Steam beans until tender; set aside.
- In a large bowl, combine onion, garlic, salt, and pepper.
- Add beans and herbs.
- Drizzle with pumpkin seed oil and toss gently to coat.
- Add vinegar, lemon juice, and zest.
- Sprinkle with fetta and adjust seasoning.
- Serve warm or chill for later — it’s equally delicious either way.
